This is currently my favourite breakfast at the moment. Even though they are made from egg whites and quinoa, when you add the lemon juice, stevia, blueberries and homemade strawberry coconut ice-cream they are so delicious and healthy with 25% Carbs, 43% Protein and 32% Fat.

Blueberry Egg White Pancakes (recipe makes 2 servings I leave half in the fridge for the next morning)
  • 250ml of Golden Eggs Egg Whites or 9 egg whites
  • 1 teaspoon Baking Powder ( leave out for thin crepe style pancakes) 
  • 2 teaspoons - 9g Natvia
  • 50ml A2 No Fat Milk
  • Pinch of Sea Salt
  • 1/3 cup Flaked Quinoa
  • 1/4 tablespoon Organic Melrose Coconut Oil
  • 1/4 cup Frozen Blueberries 

  1. Measure out all ingredients. 
  2. Place egg whites, baking powder, 2 teaspoons (6g) natvia, milk, sea salt and quinoa in a blender or magic bullet and mix for around 20 seconds.
  3. Heat pan to medium heat ( I like to use a pancake pan) wipe coconut oil in pan and spoon in half (or a 1/4 if you would like to make 2 thin ones for one serving) the batter mixture making sure it is still mixed evenly. 
  4. Cook pancake until bubbling on top and flip over to cook other side.
  5. Serve on a plate and squeeze fresh lemon juice over the pancake, add blueberries and sprinkle with remaining stevia.
  6. Add one serving of Strawberry Coconut Ice-cream (see recipe below)
  7. You can roll it, slice it, however you like it enjoy it :)

Strawberry Coconut Icecream (recipe makes 6 servings I freeze them in a 6 silicone muffin tin)
  • 30g Natvia
  • 1/2 cup (125mL) Coconut Cream Regular
  • 180 mL Golden Egg Egg Whites
  • 1 cup (250mL) A2 No Fat Milk
  • 50g Bare Blends Vanilla Bean WPI (protein powder)
  • 2 tablespoon Lemon Juice
  • 1 cup, (150g)  Strawberries

  1. Measure out all ingredients. 
  2. Place egg whites and Natvia in a mixer and mix until thick and creamy.
  3. Heat milk and protein powder until simmering.
  4. Add hot milk mix to egg whites whisking all the time and add the cream.
  5. Place mixture in larger clean pan on stove low heat and stir constantly for around 30 secs ( do not overcook or it will become lumpy) Take off stove and put into a clean mixing bowl.
  6. Mix in blender Strawberries and Lemon Juice ( I sometimes use frozen strawberries, mango or blueberries) then add to the cream mixture. Mix together and add a few drops of pink food colouring to give a more strawberry colour.
  7. Use an ice-cream maker to make into ice-cream or put in a airtight plastic container in the freezer for 2 hours until a little frosty then remix until creamy.
  8. Pour into silicone muffin tin and cover with a plastic wrap. This allows you to get the serving rith every time and makes it easy to bend and get icecream out when needed.
  9. Add one serving of Strawberry Coconut Ice-cream to your pancake.
